Boxing Day mac 'n' cheese
Christmas is good but Boxing Day might be even better. Check out our Boxing Day Mac 'n' Cheese recipe perfect for using all those christmas leftovers. Here's how to make it:
Ingredients
300g left over shredded turkey
50g butter
50g plain flour
300g whole milk
300g cheese (left over from Xmas night)
10g whole grain mustard
1 Chicken stock cube
10x sliced cooked pigs in blankets
200g short cut macaroni
Cranberry sauce
Method
Place salted water in a pan to boil
Melt butter in another pan
Heat milk with chicken cube in another pan
Once water is boiling add macaroni and cook to slight bite
Once butter is melted beat in the flour to make a roux, constantly stirring
Slowly whisk the milk to the roux
Add 2/3 of the cheese to the milk
Drain the macaroni
Add the turkey and sausages to the cheese sauce
Combine the sauce and pasta
Pour into baking dish
Top with remaining cheese
Bake at 200c for 15 minutes
Serve in a bowl with a big blob of cranberry sauce on the top!
